Our cask strength Peated Cask Single Malt Whisky is hand-crafted in small batches using 100% locally grown, traditionally floor-malted barley. Aged fully in ex-peated quarter casks, this is a delightful and moreish whisky with subtle hints of peat smoke on the palate which complement the vanilla notes from the oak and the fruitiness of our spirit. Think 'smoky vanilla ice cream', as our distillers like to describe it!

Cotswolds Peated Cask Single Malt Whisky

Lovingly crafted

Our Peated Cask expression begins with our new make spirit which is already incredibly smooth and fruity thanks to the pair of yeasts we use, the long 90-hour fermentation and the tight heart cut on the spirit still. We dilute it to 63.5% ABV before filling our ex-peated quarter casks for full term maturation.

These 125-litre casks previously contained heavily-peated malt whisky from Islay and are made from the staves of American oak bourbon casks which have been rebuilt into smaller, cigar-shaped barrels which accelerate flavour extraction through a high surface ratio of wood to whisky. We had never planned to make a peated whisky - the method of which traditionally is peat-smoking the grain during the kilning process - as peat is not native to the Cotswolds. We admittedly do like a bit of smoke in our whisky from time to time, however, and so when we discovered a technique in which the peat enters the whisky during the ageing process, creating a hint of smoke that doesn't overwhelm our delicate spirit, we fell in love and our Peated Cask expression was born.

Bottled non-chill filtered at natural cask strength for maximum flavour, without added colouring.

Carefully sourced ingredients

Malt: Odyssey, grown entirely on Cotswolds farms and traditionally floor-malted at Warminster Maltings.

Yeast: Two complementary varieties - Anchor and Fermentis - to ensure good yields and excellent fruity flavours.

Water: Village water supply - filtered, softened and demineralised before use.

Wood: Ex-peated quarter casks from Islay, Scotland.

Tasting notes

Nose: Vanilla with light charring and a touch of dried fruits and spice.

Palate: Creamy peat smoke layered with light fruits and tannin-rich wood.

Finish: Lasting finish of smoking embers, floral honey and woody sugars.
