Tengumai is made by hand,by using the sake master's sense. Shata Shuzo uses a method which is very rare today in Japn,called "Yamahai-jikomi"(one of the methods to culture yeast). With this unique method that accompanies the lactic fermentation,a very rich taste is created.It gives a long-lasting acidic and dry taste.It gives a very unique taste compared to other Japanese sake brands,and matches perfectly with meals.
History of Tengumai :
Shata Shuzo was founded in 1823 late in the Edo Period. The present head of the family is the seventh since the time of foundation. When it was founded,it was surrounded by dense forest,and it looked as if Tengu,an uncanny creature in Japanese folklore seen as a guardian of mountains,was living in the forest.
The name"Tengumai"(dancing Tengu)comes from the idea that even a mysterious Tengu would feel like dancing after drinking this sake.
Ever since then,the Shata family has continued to make this sake in the beautiful countryside.
Regional Characteristics :
Our brewery is located in Ishikawa Prefecture,the prefecture of traditions and culture,in central Japan facing the Sea of Japan. It boasts of one of the greatest local dishes in Japan, prepared with fresh and rich fish from the Sea of Japan as well as with abundant vegetables from the mountains.
The taste of Tengumai complements these rich dishes.
